Healthy Pancake Recipe

Serves 2:
  • 2 eggs, 
  • 60g oats, 
  • 150g low fat greek style yoghurt, 
  • 1/2 tea spoon of cinnamon and 
  • 1/2 tea spoon of cooking oil. 

Firstly blend the oats until is like flour. Add the remaining ingredients and blend until smooth mixture. Heat a non stick frying pan, spread 1/2 tea spoon of oil, pour small parts of  mixture to cook small pancakes. Cook for about 1 minute each pancake each side. Enjoy it with a squeeze of lemon and honey, 1/2 mashed banana, peanut butter or mashed blueberry for a  sweet and delicious taste! For a savoury taste enjoy with a slice of mozzarella or ham!
